Top Ranking Ham on the Bone
We have been top scoring in both the Herald Sun and The Age newspapers in their Christmas Taste Tests. Here’s what they had to say:
Herald Sun Christmas Ham Taste Test
A panel of chefs, food writers, and others from the food industry took part in a blind tasting of the hams, and gave some impressive feedback, for our ham, the highest scoring ham on the bone. Published in the Herald Sun 27/11/2018:
‘A clear favourite of a couple of judges, this “big, honest, sturdy good looking ham” with “delicious medium-light smoke aroma” that was “bright and clean” had a “good fat to meat ratio”. Meat with a “pleasing texture, with light sweetness” was “well balanced with salt/brine”. This is a ham “you want to get to know over the whole festive journey”.’ Dan Stock, Taste, Herald Sun Newspaper.
The Age – Good Food Taste Test
The Good Food team, have tirelessly sourced, tasted, assessed and graded a large number of entries, and determined our ham on the bone to be the top of its field. Published in The Age 4/12/2018:
“This is a top-shelf crowd pleaser that ticks a whole lot of boxes. It is a great-looking ham, big and plump with a golden hue. It is made with St Bernard’s free range pork by butcher Peter Bouchier in Melbourne. The meat is juicy, the beechwood smoke is subtle and the flavour of bay and juniper used in the brine shines through.” Richard Cornish, Good Food, The Age
We have been crafting our irresistible range of Christmas hams in Melbourne for over 30 years.
We use APIQ accredited, free range pork sourced from St Bernard’s Free Range in the Northern Grampians and Riverina for our ham on the bone. The hams are smoked over beechwood, using traditional methods and care, giving you a premium and delicious ham that is essential to your Christmas feast.
