Preheat oven to 180 degrees.
To make the dressing, combine all ingredients and mix well. Season to taste.
Place the sweet potato and tomatoes onto a lined baking tray. Drizzle with olive oil, brown sugar and season well. Roast in the oven for approx 35 mins until caramelised and cooked through.
To assemble the salad: place the spinach in a large salad bowl. Top with the roasted tomatoes and sweet potato. Follow with pieces of avocado. Sprinkle with toasted almonds. Drizzle on the dressing bit by bit until well coated. Season and serve immediately.
