We get asked about pronunciation a lot, so for our curious customers: 'Bouchier' rhymes with 'voucher'. But Peter and Sue are happy to answer to your best guess.

Peter Bouchier

Peter Bouchier

Managing Director

Peter is based in our Moorabbin facility, and he still visits stores everyday before opening. Peter is an active advocate for butchers in Australia, offering support and guidance to many independent local butchers. He has been a member of the Australian Meat Industry Council since 1983, a Victorian Councillor for 20 years and a National Councillor for 16 years, giving his time and advice to various organisations within the industry. Peter was inducted into the AMIC Hall of Fame in 2016.

Director

After spending many years running the David Jones deli and butcher, Sue now manages the administration side of the business. Keeping track of what is coming in and going out, she is based in the office at Moorabbin. Sue is passionate about quality, and has an eye for detail. Sue does not accept shortcuts, but she values accuracy and efficiency; and strives for perfection for the business.

General Manager

A qualified butcher by trade, Jon has many years experience in both retail and wholesale operations management, and he takes a hands-on approach to his role as General Manager. Jon is involved in all aspects of the business, ensuring daily operations are carried out in an efficient manner that reflects our values. Jon is passionate about hard work and continuous improvement, and is committed to delivering results for the company by improving internal operations and investing in our employees.

Malvern Store Manager

Tom has worked across all areas of the business and is now running our newest store. Tom is a vibrant fixture behind the counter at Malvern, and he is passionate about creating exciting products using the best ingredients. His attention to detail delivers confidence and trust in his customers. Tom represented our country as a member of the Australian Butchers’ Team at the Tri-Nations and World Butchers Challenge from 2013- 2018.

Toorak Store Manager

A long standing member of the Peter Bouchier team. Mike is passionate about customer service and sourcing the best possible products to meet our customers needs and exceed their expectations. Mike has significant butchering experience, as well as a love of food and cooking that drives him in his role. Mike enjoys training and educating his team, as well as furthering his own knowledge and skills with the latest trends in food.

David Jones Butcher Manager

Born in Colombia to a family of butchers, John learnt the trade at his mum's butcher shop in Bogota. John has been in Melbourne for five years and has learned the Australian butchering ways. John enjoys the challenge of being the city store manager, including learning new skills and making new friends. Along with the rest of his team, John works to ensure all of our customers are happy.

Production Manager and Smallgoods Maker

Our German butcher and smallgoods maker, Felix has been a part of the Peter Bouchier team for many years. As well as taking the lead in our smallgoods production, Felix organises and oversees the day to day running of the overall wholesale production. Felix is passionate about quality, and he works closely with Peter in the development of our smallgoods. Felix values authenticity, quality, and tradition when making these products.

Wholesale Account Manager

Virginia grew up in the country and has a respect for the whole process from farm to table. Virginia has extensive knowledge and experience in managing brands, and she provides helpful and concise information and exemplary service through her work.

Tania Shaw

Tania Shaw

Food Technologist

Tania is our Food Technologist, which means she dreams, cooks, eats, and documents. Creating and developing new products from concept to production, and constantly reviewing the product range. Tania is passionate about food, family, and friends, and she loves trying new foods and flavours. Her role is both creative and analytical, and she gets a buzz out of creating a new product and imagining people enjoying it with their friends and family.

Danielle Bouchier

QA and Systems Officer

After a rewarding ten year career in teaching, Danielle completed her Diploma in Food Science and Technology in 2018, and was awarded second place in Product Development. Danielle works closely with our QA Manager to fulfill various QA requirements, as well as implementation of technology and systems across the business. Danielle has a passion for detail, innovation, and processes, and she is able to improve functionality across many aspects of the business.

Marketing Manager

Jacqui manages all marketing requirements of the company, from branding to events, retail and wholesale promotions and company wide projects. Jacqui's previous career as a registered nurse has enhanced her pragmatic attitude, and capacity to multitask. Jacqui is passionate about the Peter Bouchier community, our employees, our customers, and our local communities. She develops initiatives both internally and externally to strengthen relationships, continually grow, and support those who support the business.

Financial Manager

Amy is passionate about small business, and the opportunity to make a substantial difference through financial and administrative involvement across all aspects of the company. She loves breaking down the numbers, investigating, and problem solving. Amy enthusiastically manipulates the data and applies it directly to operations, presenting information in a way that is relevant and adaptable for the team. Amy is constantly challenging and evolving the approach to financial administration.

We work with the leading producers

We source all our meat from the leading free range producers in Victoria and NSW. We choose suppliers who share our passion for quality meat, as well as animal welfare and sustainability.

We also have strict requirement for the size, type, and quality of meat we accept from our suppliers, so we can always ensure a consistent and high-quality product for our customers.

Correct handling is essential

All our products are prepared with skill and precision. We source premium quality meat and we treat it with respect when cutting, slicing, and trimming to ensure you get the best final product.

All our smallgoods and ready meals are prepared in-house by our team, using our premium meat and only the highest quality, fresh ingredients. We do everything we can to make the best products for our customers.

The history of Peter Bouchier

Peter Bouchier has a rich butchering history. Throughout it all, we've always focused on thoughtful and consistent service and products.

1976

After growing up next to his parents' butcher shop in Noorat, Peter moved to Melbourne to begin his apprenticeship at William Angliss at the age of 16.

1980

After completing his apprenticeship, Peter started managing his employer's shop in Malvern Road, Toorak.

1983

Peter and Sue Bouchier purchased the butcher shop and began the tradition that is Peter Bouchier–Butchers of Distinction.

2001

The second Peter Bouchier store opened in the David Jones Foodhall in Bourke St, Melbourne. This allowed us to extend our range of products and more people could taste the Peter Bouchier difference.

2007

With a burning desire to produce traditional style smallgoods, our operation expanded with a new facility, including a cutting room and smallgoods production. This facility also holds our head office and wholesale production.

2017

The latest addition to the Peter Bouchier family is the retail store within Malvern Central, which opened in December 2017. This store offers all of our signature range plus a stunning dry-ageing cabinet.

The Peter Bouchier Charitable Foundation

For many years, our business has made contributions to various local fundraisers and initiatives, including local sporting groups, schools and kindergartens, charities, and community groups.

Establishing the Peter Bouchier Charitable Foundation has allowed us to extend our charitable reach, giving us the ability to partner with Australian-based charitable organisations on a larger scale, through the continued support of our customers. Peter Bouchier will select a charitable organisation to partner with, on an annual basis through careful thought and consideration.

In loving memory of our colleague Emma Corcoran, who sadly passed away in 2018 due to an aneurysm, we are partnering with the Brain Foundation for the duration of 2019. The Brain Foundation funds ground breaking projects that aim to advance diagnoses, treatment and patient outcomes, with 100 per cent of donations going directly to research.

The Peter Bouchier community was deeply saddened by Emma’s passing. We miss her greatly and honour her through our partnership with the Brain Foundation.
