A chicken breast fillet is the pectoral muscle cut from the underside of the chicken. We source our chickens from leading ethical poulterers across Victoria and New South Wales. Once selected, our meticulous butchers hew the two breasts from the bone. They also retrieve the chicken tenderloin, which, as the name suggests, is a tender and delicious strip of muscle beside the breast.
Chicken breast is prized as a low-fat, low-calorie lean protein loaded with nutrients and vitamins. It’s also an excellent source of vitamin D, vitamin B, iron, calcium and zinc. As you can imagine, these qualities make it a favourite amongst the health-conscious. But the fullness of its flavour and the range of recipes it enables make it a staple in households worldwide.
- Chicken breast fillets are cut from the breastbone of the chicken, and thick cuts of lean white meat. Their high protein and low-fat content make them a health-conscious yet delicious choice.

- If you don’t have much experience cooking chicken breast, try cooking it at a lower temperature for a longer time. Leaving it in a sizzling-hot pan practically guarantees blackened skin and a dry core.
- If you’re after crispy golden skin and those precious flavour bombs that accumulate at the bottom of the pan, then begin by cooking the chicken breast on a sizzling pan, then lower the temperature when the skin looks good.
The most sure-fire way to ensure your chicken breast is thoroughly cooked without being overdone is to invest in a meat thermometer. Keeping an eye on the internal temperature of your chicken breast takes the guesswork out of the equation and leaves you with flawless results every time.
