Preheat fan forced oven to 160°C.
Brush the top of the turkey breast with olive oil, salt and pepper, cover with foil and place in the oven dish.
Cook the turkey breast allowing 30 minutes per 500g (approximately 2 hours). Or until internal temperature reaches 70°C.
Remove the foil with 30 minutes remaining and return to oven to allow the skin to crisp and turn golden brown.
Remove from the oven and let stand for 15 minutes prior to serving.
