Tom Bouchier selected for the Australian Butcher Team

We are proud to share some exciting news!

Tom Bouchier has once again been selected as a member of the Australian Butcher Team and will represent Australia at the World Butchers’ Challenge in Brisbane in March 2028.

For many of our customers, this may be the first time hearing about the World Butchers’ Challenge. Often described as the Olympics of butchery, the competition brings together teams from across the world to compete at the highest level. It is a showcase of technical skill, teamwork, creativity, presentation and pride in the trade.

This is a significant achievement for Tom and a proud moment for all of us at Peter Bouchier.

Tom has been a long standing member of the Australian Butcher Team, having represented Australia on the world stage before. To be selected again is both a great honour and a reflection of the years of work, training and dedication he has put into the craft of butchery.

For those who know Tom, this will come as no surprise. He has built his career around skill, precision and a deep respect for the trade. His place in the Australian team reflects his ability as a butcher, and his commitment to continuing to push the standard forward.

Competing at the World Butchers’ Challenge requires far more than cutting skill. Teams are judged on technique, teamwork, product development, display, creativity and how they bring a full butchery showcase together under competition conditions. It is fast paced, highly detailed and demands a huge amount of planning before the team even steps onto the competition floor.

The last World Butchers’ Challenge was held in Paris in 2025, with teams from 16 countries represented. Australia secured an impressive third place, and in 2028, on home soil, the Australian team will be chasing gold.

The 2028 event will also mark the 10th World Butchers’ Challenge, making Australia’s role as host even more special. With more countries expected to join the competition in Brisbane, it will be a milestone event for the global butchery community.

While 2028 may feel like a long way away, the work starts now. Over the coming months, Tom and the Australian team will come together to plan, train and develop their approach as they prepare to take on the best butchers from around the world.

At Peter Bouchier, we have always believed in championing traditional butchery while continuing to move the craft forward. Tom’s selection is a reflection of that commitment and of the skill, discipline and pride that sit behind the trade.
