Whole Turkey Cooking Instructions:
1. Preheat fan forced oven to 160°C.
2. Add stuffing if using.
3. Brush the skin with olive oil, season with salt and pepper.
4. Cover with foil and set the turkey in a dish with a cup of chicken stock or water.
4. Cook for approx. 35 to 40 minutes per kilo.
5. Baste every 30 minutes.
6. With 30-60 minutes remaining, remove the foil.
7. Return to the oven and cook until the skin is crisp and golden.
8. Check doneness. Juices should run clear between breast and leg, or use a thermometer. Aim for 70°C internal.
9. Rest for 20 minutes before carving.

4 kg 2 hours 20 minutes to 2 hours 40 minutes
5 kg 2 hours 55 minutes to 3 hours 20 minutes
6 kg 3 hours 30 minutes to 4 hours 0 minutes
7 kg 4 hours 5 minutes to 4 hours 40 minutes
Notes
Remove the foil for the final 30 minutes to crisp the skin.
A turkey without stuffing will take slightly less time.
Use a thermometer and finish when the centre reaches 70°C. Rest 20 minutes before carving.
