As you can imagine, we spend quite a bit of our lives obsessing over meat: its flavour, texture and composition; the cut and the presentation; the provenance, too, of course. And despite our constant exposure to the finest Australian meat available (or, perhaps, because of it), our love for lamb grows by the day. Flavoursome, sweet and tender as anything, lamb is truly a treat for the palate.

We source our grass-fed lamb from ethical free-range farms, where they are raised with the utmost care. The dedication our lamb-rearing partners bring to their trade is second to none, and the results of their efforts are immediately clear in the quality of the meat. The range of sausages we have on offer will become a family favourite in no time.
Once the lamb enters our care, it is our responsibility to concentrate and fortify the qualities of the meat rather than dilute them. As butchers of distinction, that is a task that truly excites us. The recipes you see above have been concocted and honed by our butchers and tastemakers for maximum flavour. As a result, each and every bite leaves a lasting impression.
Oh, we most certainly can.
Our in-house sommelier recommends pairing the lamb, honey and rosemary sausages with a Pinot Noir or other medium-bodied reds, such as Grenache or Tempranillo. The subtle tannins of these lighter-bodied but lively reds complement the herbaceous aroma of the sausages, and won’t overpower the sweetness of the sausage.

Our lamb sausages contain sulphites. We find sulphites an integral part of the process as they bolster the freshness of the ground meat. Rest assured that the sulphite levels in our sausages are at their absolute minimum.
