Today’s the day you treat yourself. Wagyu beef is irrefutably the best type of beef on the planet. Beautifully marbled, every bite is a buttery delight. It is a delicacy savoured on the highest of high occasions: momentous celebrations, anniversaries, or a night away from the kids.
What place does a world-renowned style of meat have in the humble burger? We cannot put the answer into words — you must simply try it for yourself. As your guests eat in awe-struck teary-eyed silence, you will know you are eating the best burgers under the Southern Cross.
Even if you aren’t quite sure what Wagyu beef is, you know its reputation. The name ‘Wagyu’ literally translates to ‘Japanese cow’, revealing the provenance of the prized meat. Once exported solely from the island nation, Wagyu cattle have been bred in the United States and Australia since the 1990s.
Australian Wagyu beef is the highest quality varietal outside of the Japanese original, thanks to the unimpeachable efforts of meat maestros at Blackmore Wagyu. The first to breed Wagyu in Australia, Blackmore has raised their cattle and maintained their standards in close cooperation with Japanese breeders to ensure quality.
But in a burger? Oh, yes. Mincing Wagyu into burger patties neither ruins nor disrespects this divine meat. Rather, it elevates a household favourite into a work of art. The tender meat crisps perfectly on the surface yet remains moist and creamy at its core. Cooking is about personal expression, and choosing to cook with Wagyu is like painting with rare and vivid colours taken from the palettes of the old masters themselves.
In Australia, Wagyu beef is graded on a scale from 1 to 9, with 9 being the highest score. The score reflects the level of marbling, which are streaks and spots of intramuscular fat. Wagyu is rarely marketed with a score below 3, as at that point it is virtually indistinguishable from regular beef.
Japanese and American Wagyu beef is graded on different scales; the American scale only goes up to 5, and the Japanese Wagyu scale ascends to 12. However, the value of each score is consistent between the Japanese, Americans and Australians.
Wagyu meat is so flavourful and delicate that simplicity is key. We recommend sticking with a few classic condiments: salt, pepper, tomato, lettuce, a slice of cheese and maybe some caramelized onions. Allow the flavour of the meat to remain the star, and you’ll have gourmet burgers on your hands.
Whether you are cooking on a BBQ or a frying pan, being able to control the temperature carefully is the best way to cook your Wagyu burgers.
Set your grill to medium heat. As it warms, season your Wagyu beef burger patties to your liking. Cook them on each side for 3-4 minutes, and ensure they do not burn. The fat within the patties will melt, ensuring you get flavourful, juicy burgers.
