We admit we can be prone to poetic language when we describe our beef. We love our work; it can be hard not to get a little carried away when describing a beautiful steak. But believe us when we tell you that it is simply impossible to exaggerate the perfection of the Blackmore Wagyu beef porterhouse steak.
There’s little we can say that the picture of the porterhouse can’t tell you. Bright red fresh meat flecked and veined with pure white fat; squint and tilt your head, and you’ll see a topographical map of paradise.

‘Wagyu’ quite literally translates to ‘Japanese cow’, and traditionally refers to specific breeds of Japanese cattle prized for the distinct marbling of their tender meat. Why, then, are Australian-bred cattle allowed to claim the title? David Blackmore was the first to import and raise pure Wagyu cattle in Australia, a feat he accomplished by earning the trust of Japan’s extremely protective Wagyu breeders.
Today, David Blackmore’s Fullblood Wagyu cattle produce the most premium Wagyu products in the country. A Blackmore Wagyu porterhouse is arguably the finest Wagyu steak in the world, barring the Japanese originals.
Japanese Wagyu is graded from 0 to 12, with 12 being the highest score. Australian Wagyu can only be graded up to 9. That is the score our Wagyu product achieves, so you know your Wagyu porterhouse is the best in the country.
BBQs or stoves will both work just fine as long as you can carefully calibrate the temperature. You don’t want too high a flame; Wagyu steaks are best served medium. It would be a disaster to ruin the steak by overcooking it.
To cook your Blackmore beef porterhouse steak:
* Bring the steak to room temperature.
* Set your grill to medium heat.
* Season the porterhouse with salt and olive oil.
* Cook the steak for 2-3 minutes on each side.
* Let the steak rest for 2-5 minutes.
* You may season it again to taste, but we recommend you do so lightly, especially if it’s your first time cooking Wagyu. Enjoy the flavour of the meat itself this time, and you’ll be more confident to experiment with flavours and techniques in the future.
