Free Range Porchetta

Porchetta
- Preheat fan forced oven to 240°C.
- Remove porchetta from packaging and pat the rind very dry. Rub with olive oil and salt, working the salt into the scored rind.
- Place on a wire rack set over a baking tray. Add a little water to the tray to reduce smoking.
- Roast at 240°C until the rind starts to crackle, up to 30 minutes.
- Reduce oven to 180°C and continue cooking for 40 to 45 minutes per kilo. Rotate the tray during cooking for even crackling.
- If the rind is crisp before the meat is done, cover loosely with foil and continue cooking.
- Rest for 20 minutes before carving.

Pricing is dependent on product weight, which is why we only take a deposit. The deposit value is set at 25% of the estimated total price, the remaining value is payable at collection.
