Our free-range pork is beautifully flavourful meat, and its fat content guarantees juicy and tender sausages. It’s no wonder that so many cultures have spent generations turning pork sausages into treasured delicacies. We’ve taken the time to master these recipes and proudly offer house-made English, German and Italian style sausages using only the finest ingredients. You’ll also notice an Irish sausage within our ranks; while the recipe has immigrated here from West Cork, Ireland, these beauties have been made right here by our charcutiers.

Pork Sausages
The simplicity of the sausage has made it a staple on dinner tables across the world. Countless generations have grown up on them, whether as favoured childhood meals, backyard barbecue heroes or charity snags.
To our mind, making quality gourmet sausages calls for simplicity and respect for each ingredient. So our efforts have been poured into finding the perfect balance of mouth-watering pork meat and juicy fat and the right level of seasoning that’ll bring out those flavours without overpowering them.
When that balance of flavours is struck, as we believe it has been, magic happens. So bring a plate of our sausages to your next BBQ, and from the very first bite, you will know what we mean.
Frequently Asked Questions
Bratwurst can be enjoyed barbequed, pan-fried and even boiled. In fact, simmering bratwurst in beer adds a whole new level of flavour.
Here’s how you can give this method a try.
- Soften a thinly sliced onion in a skillet with a pat of butter. Once they turn clear, introduce the bratwurst and beer.
- Bring the beer to its boiling point, then bring the heat down to a simmer. Let cook for approximately 30 minutes or until the sausages are cooked through.
- Once cooked, remove the bratwurst and place them on a hot grill. Roll them around on high heat till they’ve browned.
- Serve on toasted, crunchy bread with the onions.
We recommend an amber ale – the sweet, toffee flavour of the beer pairs perfectly with the bratwurst and onions.
Cooking sausages in the oven is a time-saving, stress-free way to concoct a great meal, especially when you’ve got a family to feed.
To get perfectly oven-cooked sausages, preheat your oven to 180° (fan-forced), then cook for 30 minutes. Rotate the sausages after 15 minutes to ensure they cook evenly.
It’s not always clear when your sausage has cooked all the way through, even when the surface is perfectly browned.
The best way to check if a pork sausage is cooked is to pierce it with a skewer, knife or fork. If the juice that runs out is clear, it has cooked.
Another way to check is to slice the tip off of the end of one of the pork sausages. The interior should be a pale white, without any raw-looking pink or red meat.
