The chuck eye roast is cut from the ever-popular rib eye muscle, which also yields, you guessed it, rib eye roasts and steaks. The only difference between the cuts is that the chuck portion of the muscle is closer to the shoulder joint, and therefore is exercised marginally more than the rib eye portion.
But the similarities outweigh the differences, and the chuck eye roast is just as tender and juicy as you could hope for.

Here’s our recipe for a simple yet delicious chuck eye roast with a paprika herb rub.
- Preheat your oven to 190°C.
- Blend paprika (smoked or sweet paprika), cumin, garlic, thyme, rosemary, salt and pepper, and a dash of olive oil (vegetable oil will do, too).
- Marinate the chuck eye roast in the spice mixture.
- Place an ovenproof skillet on moderate heat over the stove, then sear the roast till the seasoned surface is lightly browned.
- Place the skillet with the roast in the oven and roast generously for 1 hour. Use an instant-read thermometer inserted into the thickest section of the meat to determine when it’s reached your desired level of doneness (we prefer 65°C for medium-rare meat).
- Thinly slice against the grain with a sharp knife and serve.
