How to Cook Sausages to Perfection: A Guide for Home Cooks

Cooking sausages might seem simple, but mastering the perfect sausage is an art form. Whether you prefer a juicy beef snag or a gourmet pork and fennel link, knowing how to cook sausages properly ensures you unlock their full flavour. In this guide, we share professional tips to help you cook sausages to perfection - every time.

Choosing Premium Sausages: It Starts with Quality

When it comes to cooking sausages, quality is everything. At Peter Bouchier, we pride ourselves on using the finest cuts of meat and premium ingredients. Choosing premium sausages, like ours, ensures better flavour, texture, and a more satisfying meal.

The Best Methods for Cooking Sausages

1. Pan-Frying

  • Use a heavy-based frying pan for even heat distribution.

  • Add a dash of oil to the cold pan before placing sausages in.

  • Cook on low to medium heat.

  • Turn regularly to brown evenly.

  • Cook for 12-15 minutes depending on size.

2. Grilling

  • Preheat your grill to medium.

  • Lightly oil the sausages.

  • Turn regularly to avoid burning.

  • Grill for 10-12 minutes.

3. Oven-Baking

  • Preheat your oven to 180°C (fan-forced).

  • Place sausages on a lined baking tray.

  • Bake for 20-25 minutes, turning halfway.

4. Poaching and Searing

  • Gently simmer sausages in water for 6-8 minutes.

  • Drain and sear in a hot pan for colour and texture.

Always check that sausages are cooked through – they should reach an internal temperature of 70°C.

Common Mistakes to Avoid

  • High heat: Cooking too fast can split the casing and dry out the meat.

  • Pricking sausages: Don’t pierce them — you’ll lose all the juices and flavour.

  • Crowding the pan: Leave space for even cooking.

Serving Suggestions for the Perfect Sausage Meal

Pair your sausages with:

  • Creamy mashed potato and onion gravy

  • Freshly baked rolls with mustard and caramelised onions

  • A vibrant salad with fresh herbs and lemon

The Final Word on How to Cook Sausages

Cooking sausages to perfection is about patience, premium ingredients, and the right technique. Choose quality, control your heat, and enjoy sausages that are juicy, flavourful, and satisfying — every time.
