Carne Asada Tacos

Fresh and full of flavour, this Carne Asada Tacos recipe is quick and simple, making them perfect for mid-week and also great to serve for friends on the weekend.

EQUIPMENT
  • Grill plate or grill pan
INGREDIENTS
  • Marinade:
    • 3 tablespoons lime juice
    • 2 tablespoons soy sauce
    • 1 tablespoon brown sugar
    • 1 tablespoon cumin powder
    • 1 tablespoon brine from pickled jalapeños
    • 2 garlic cloves, crushed
    • 1 teaspoon dried oregano
    • 1 teaspoon paprika
  • Salsa:
    • 3 tablespoons lime juice
    • 1 large handful coriander, roughly chopped
    • 1 tablespoon of pickled jalapeños, roughly chopped
    • 1/2 brown onion, finely diced
    • Pinch of salt
  • Serve with:
    • 12 tortillas
    • 1 avocado, sliced
METHOD
  1. Combine marinade ingredients, stir until sugar is dissolved then add steak. Marinate for at least 20 minutes
  2. Combine salsa ingredients, set aside
  3. Place steaks on a hot barbecue or pan and cook till medium rare (will test cooking time)
  4. Leave steaks to rest for a few minutes
  5. Grill tortillas until soft
  6. Top with steak, avocado and salsa
