Preheat oven to 180 degrees.
Place butterflied chicken flat on oven tray, skin side up.

We are well into our 80s. The Tuscan chicken is our favourite meal when we have guests. It’s always perfectly cooked following the simple instructions. I cover with foil and a towel until guests arrive. Serve with a green veg, smashed and fried kipfler potatoes and big white spring onions sliced, sprinkled with brown sugar and cream and baked until soft and browned. We have enjoyed up to a dozen of these Bouchier birds and they are a triumph every time Thank you

We wouldn’t have chicken any other way. Why buy lesser quality, generally tasteless chickens when you can so easily throw one of these on the BBQ? They are generously-sized, moist and delicious. One of these feeds my wife and me for three meals. We always have a couple in the freezer close at hand and top up when we need to. 10/10.
