Absolutely amazing. Our favourite. What I first thought was a small portion, turned out to be surprisingly filling. The use of thigh fillets worked well because they did not dry out as breast fillets might have. The pesto filling was not too overpowering. I think a slice of serrano ham or prosciutto would be a nice addition.
