I found a recipe which is easy and delicious. These veal cutlets are so lovely thick and tender I put them in bread crumbs brown them and finish in the oven. Then into the pan I add rosemary and capers and mix with the butter and a squeeze of lemon juice. Serve the cutlets with the sauce poured over.

I made a pocket in the veal and added cheese wrapped in prosciutto. Then I crumbed them. Shallow fried and the popped in the oven for ten minutes. Delicious. Would like them slightly larger if possible.
